The five roles

First Chef / Kitchen Cook — $25/hr

Leads the line during service: runs the kitchen's cooking stations, keeps dishes consistent and makes sure food safety rules are followed. Previous cooking experience and a resume are required.

Line Cook — $21/hr

Cooks and plates hot food on an assigned station during service, following set recipes and timing. Previous line experience and a resume are required.

Prep Cook — $19/hr

Washes, cuts, portions and labels ingredients before service so the line is ready to cook. A resume is optional.

Dining Room Attendant — $18/hr

Sets up, resets and cleans the dining area, restocks supplies and keeps tables and stations tidy between meals. A resume is optional.

Kitchen Hand / Dishwasher — $18/hr

Washes dishes, pots and equipment, keeps the dish area running and helps keep the kitchen clean. No previous experience needed. A resume is optional.

The Houston run (LUZIA) opens 20 March 2027, 6 days after Miami closes on 14 March, at the same hourly rates.

Pay rises through the year. A Kitchen Hand / Dishwasher earns $18 in Miami, $20 in Denver, Portland and Atlanta and $22 in San Francisco.
