    What Does On the Fly Mean in a Kitchen?

    Also called: OTF, fly it

    "On the fly" means a dish is needed immediately and jumps ahead of everything already in the queue. It is called when something was missed, dropped, sent back or forgotten, and the table is already waiting — so the line drops what it can and fires that item first.

    Why it is called and what it costs

    An on-the-fly call is a recovery, not a normal ticket. A dish was never rung in, a plate went to the wrong table, an allergy was missed, or something was returned. The table has already been sitting, so the normal firing order stops being fair to them.

    The cost is that every other ticket on the board slips. A line running at capacity cannot absorb an on-the-fly without pushing something else, which is why good expediters announce it, name the station, and adjust the rest of the board out loud rather than quietly inserting it.

    Frequently asked questions

    When the line cannot absorb it

    A line at full capacity has no slack for recovery tickets. Adding a hand on prep or the dish station on known-heavy nights is usually cheaper than the comps a backed-up pass generates.
